POHA

Poha
Poha or flattened rice used to be a poor man's food ages ago but has traveled its way across five star breakfast buffets because of it nutritional benefits. It's low in calories, high in protein and fiber.

Ingredients:-
Poha/flattened rice: 2cups
Onion(chopped): 1
Mixed bell peppers(chopped) : 2
Potato(thinly sliced): 1
Peanuts(plain): 1tblsn
Curry leaves: 10-12
Mustard seeds: 1tsp
Turmeric powder: 1tsp
Red chilli powder: 1/2tsp
Salt: to taste
Oil: 1tblspn

Garnishing:-
Chopped coriander
Sliced green chilles
Nylon sev (or any sev)
Lemon halves

Method:-
Take a strainer and wash poha in running water 2 times. Keep aside. Heat oil in wok and add mustard seeds and curry leaves. When mustard seeds splutter, add onions and saute for a minute. Add potatoes and peanuts and cover it and allow to cook for 2minutes on low flame. Add bell peppers, salt, turmeric and poha and stir it well. Cook at low flame for 2 more minutes. Garnish it with coriander and green chilles. Sprinkle nylon or besan sev and lemon juice to make it tangy.
