OPEN COIN SANDWICHES





Open Coin Sandwiches
Colourful finger food is loved by all. We have a fusion which is a quick fusion with ingredients like cottage cheese, bell peppers and have a feel of crunchy pizza.it can be served as starter, snacks and ingredients can be used as per preference. We can use our choice of bread and can make more healthy variations with whole wheat or multi grain buns.

Ingredients:-
1 onion chopped
1 tomato chopped
250 grams cottage cheese cut in cubes
1 cup red and yellow bell pepper chopped
1 cup green capsicum chopped
Salt to taste
1 tsp. red chilli powder
1 tsp. coriander powder
½ tsp. turmeric powder
½ tsp. garam masala powder
1 tsp. kasuri methi
1 tsp. lemon juice
2tblspn tomato ketchup
2 tbsp. mint chutney
Coriander leaves for garnishing
Method:-

  • Take oil in a non-stick pan and saute onions. When onions turn pink add all the bell peppers and green capsicum.
  • Saute for 4-5 minutes and add all the spices and salt.
  • Add the chopped tomatoes and paneer and saute for 2 minutes more. 
  • Add lemon juice and keep aside.

  • Cut the burger slices horizontally in coin shape.
  • Grill the slices and put some drops of oil while grilling them.
  • Place the slices in a tray and apply mint chutney and tomato ketchup on it.
  • Fill the slices with vegetable mixture kept aside and top it up with grated paneer.

Chaach or spiced buttermilk is an excellent cooler for summers. The spices like rock salt, roasted cumin powder and green chillies have a cooling effect and are great for digestion. I like to have it with poha most of times. The combination is just perfect on onset of summers and the surprise element of beetroot gives it a colour which makes you blush. 

Beetroot chaach
Ingredients:-
1 cup yoghurt
¼ tsp. black salt
¼ tsp. roasted cumin powder
½ green chilly,finely chopped(optional)
A pinch of grated ginger
½ beetroot finely chopped
150 ml water

Method:-

  • Mix all the ingredients with hand blender to get a smooth and bubbly chaach.

  • Garnish with coriander leaves and grated beet root.

VEGETARIAN OMELETTE



 Vegetarian omelette
Egg lovers love omelette. Now try this…this is not only meant for vegetarians but for all non-vegetarians who are fasting. I gave this name because this pancake had texture, look and shape like omelette.Though taste can’t be matched completely but its as close as it can get. At for diet watchers and health conscious.it is good source of protein as oats and semolina both are rich in protein.

Ingredients:-
1 cup oats grinded
1 cup semolina
1 cup yoghurt
1 cup mixed vegetables chopped (bell peppers, broccoli,carrot,onion)
1 cup milk
Salt to taste
1 tsp. fruit salt
1 tsp. pepper
1 tbsp. Oil

Method:-

  • Take a big bowl and mix oats, semolina and yoghurt. Add milk and mix well till it has batter like consistency.

  • Mix all vegetables, salt and pepper.

  • Heat a non-stick pan and put a little oil. Just before cooking put fruit salt in oats mixture and give a slow stir.

  • Put the batter in small quantities in pan and let it cook on low flame .flip and cook on both sides till it turns brown and fluffy.

  • Serve it hot with bread toasts and ketchup.

FRENCH TOAST




French Toast
French toast also known as gypsy toast or eggy bread is easiest and best thing which we can make out of eggs and bread. Started eating in childhood and I am still unstoppable. There is nothing like a rich, well-made French toast in breakfast. Children like to have it with maple syrup as they have sweet tooth but somehow like it with tomato ketchup. This easy and on the go recipe is a must try for those who haven’t tried it yet. Its liked by kids because of taste and softness.

Ingredients:- 
(for 3-4 toasts):
2-3 eggs
½ cup milk
Salt to taste
1 tbsp. Oil
Salt to taste
Peppers and chillies of choice

Method:-

  • Beat together milk, salt, eggs and desired spices.

  • Heat a pan or grill and grease it with oil.
  
  • Dip each slice of bread in milk-egg mixture, soaking both the sides. Place it carefully in pan and cook on both sides on low flame till it turns golden brown.

  • Serve hot with maple syrup/butter or ketchup.


GRILLED BURGER



 Grilled Cottage Cheese & Mushroom Burger With Egg

Burger is a kind of sandwich which consists of patty which is arranged well inside buns specially made for burgers. The popularity of burger can be imagined with the popularity of fast food chains across the world. The burger patties are available in frozen form in almost every super store.
 
We are presenting a healthier version which uses grilling process of ingredients like cottage cheese and mushroom.Kids’s favourite snack can be made healthier by using whole wheat buns though we have used normal ones. Vegetarians can skip egg as per their convenience.

Ingredients:- 
(Serving For 1)
100 grams Cottage cheese 
1 burger bun
Salt to taste
½ tsp. crushed black pepper
½ tsp. chat masala
1 onion slice horizontal
1 tomato slice
1 tsp. tomato ketchup
1 tsp. mint dip
1 tbsp. oil

Omelette (optional)
Salt to taste
1 egg
½ onion slicely cut
 ½ turmeric powder
1 tsp. oil

Method:-

  • Take cottage cheese, onion slice, tomato slice and mushroom in a bowl and marinate it with oil, salt and crushed pepper.
  • Heat a grill pan/electronic grill and grill cottage cheese steak till nicely brown colour appears. Also grill mushroom, tomato and onion in similar way.

  • Take burger bun and make a slit in between with a sharp knife. Apply little butter and grill them.
  
  • Make an omelette of 1 egg by beating 1 egg and adding salt and pepper to taste, little chopped onion and 1 tsp. oil.




  • When all above steps are done, we’ll arrange the burger. First tomato ketchup is applied in the bun on lower side. The cottage cheese steak is placed over it and then chat masala is sprinkled and onion sliced is placed. Above it we place omelette and again mint dip is applied. Finally grilled mushroom is placed.

  • The upper bun is well sealed by using toothpick and a mushroom as shown in picture.

  • The burger can be served with more of grilled vegetables or simple potato wedges. You may try your version of grilled steak using tofu or fish.
