OATS PANCAKES AND CHAACH


Oats-Veggie Pancakes and Cucumber Chaach
A power packed option for lunch and breakfast, this dish has goodness of proteins because of semolina and oats as well as goodness of veggies. When packed it remains fresh for hours.Colorful pancakes are made along with chopped spinach which is rich in iron and minerals. It’s a good option for weight watchers as well because of low fat content. Try variations and colours with purees like spinach or beetroot.

Ingredients:-
1 cup powdered oats
½ cup semolina
2 tbsp. yoghurt
½ cup chopped veggies of choice (broccoli, carrot,bell peppers)
1 onion chopped
1 cup milk
½ tbsp. cream
Salt to taste
½ tsp. black pepper powder
2-3 chopped green chillies (optional)
Method:-
  • Take a large bowl and mix oats, semolina, yoghurt and milk. The batter should be little thick.
  • Mix in vegetables and cream. Add salt and pepper and whisk till mixture is smooth.
  • Heat a tawa/non-stick pan and grease it with few drops of oil.
  • Put and mixture on tawa and expand it with the help of ladle. Make small pancakes so that they don’t break. Let it cook on low flame and flip when colour changes to brown. Add some more drops of oil if required.
  • Serve with sauce or dip of your choice.


Cucumber Chaach
An excellent summer cooler, it’s made like a normal chaach with added grated cucumber and garnished with boondi.

COLD COFFEE THUNDER



 


 Cold Coffee Thunder

Cold coffee is an excellent cooler during summers. Coffee is rich in caffeine and is good to boost metabolism if consumed in moderation. This drink is ideal for scorching summers and can be tried with whipped cream, crushed Oreo biscuits caramel sauce too.

Ingredients
300 ml milk
2 tsp. sugar
½ tsp. coffee
4 ice cubes crushed
1 tbsp. chocolate sauce
2 tsp. chocolate powder
1 small scoop of vanilla ice cream
Method:-

  • Take milk and blend it finely with coffee, chocolate sauce, crushed ice and 1 tsp. chocolate powder.
  • Pour 2/3rd of cold coffee in a glass and blend ice cream with remaining milk just for 2-3 seconds. Top it over rest of coffee in glass.
  • Garnish it with remaining chocolate powder.

STRAWBERRY LEMON SPRINTER



 


 Strawberry Lemon Sprinter
Strawberry lemonade is an interesting fusion of fresh lime soda and is an interesting drink during summers. Strawberries and melons are rich source of vitamin c and antioxidants which are good for body and radical damage. The refreshing pink colour soothes up the mind and body giving it a protection against heat stroke as well.

Ingredients:-
12-15 fresh strawberries, peeled, pureed and strained
2 tbsp. lemon juice
75 ml sugar syrup
500ml soda
½ tsp. Lemonade spice (black salt +roasted cumin powder)
7-8 fresh mint leaves crushed
Crushed ice
Lemon slices and bits of strawberries for garnishing

Method:-

  • Take a glass jar and put half of crushed ice.pour strawberry puree and add remaining half of crushed ice.
  • Add sugar syrup and slowly fill up the jar with soda avoiding the fast speed.
  • Add crushed mint and lemon slices. Lastly add the lemonade spice and give a stir with stirrer.
  • Must be consumed immediately.

SWEETHEART CHAACH



 Sweetheart Chaach
When Chaach Marries Poha

Chaach or spiced buttermilk is an excellent cooler for summers. The spices like rock salt, roasted cumin powder and green chillies have a cooling effect and are great for digestion. I like to have it with poha most of times. The combination is just perfect on onset of summers and the surprise element of beetroot gives it a colour which makes you blush. 

Beetroot chaach
Ingredients:-
1 cup yoghurt
¼ tsp. black salt
¼ tsp. roasted cumin powder
½ green chilly,finely chopped(optional)
A pinch of grated ginger
½ beetroot finely chopped
150 ml water

Method:-

  • Mix all the ingredients with hand blender to get a smooth and bubbly chaach.

  • Garnish with coriander leaves and grated beet root.
